Why does my converted document not match the original layout?

PDF stores where things are drawn on a page, not how a document is structured. Converting to an editable format means reconstructing that structure, and complex layouts, multi-column text and unusual fonts are where the reconstruction is least exact.

Can I extract text from a scanned PDF?

Only if the scan carries a text layer. A PDF that contains nothing but page images has no text to extract, and the result depends on the quality of the original scan.

Is there a file size limit?

Very large files may take longer or fail on a slow connection. For everyday documents there is no practical limit.
