How it works

Kitchen volumes come from NIST's conversion factors: a US cup is 236.588 ml, a US tablespoon a sixteenth of that (14.79 ml) and a US teaspoon a third of a tablespoon (4.93 ml). The metric cup is 250 ml with 15 ml and 5 ml spoons, and the old UK imperial cup is ten imperial fluid ounces, 284.13 ml. Weights use the avoirdupois ounce (28.35 g) and pound (453.59 g). Converting between volume and weight needs a density, so the widget asks for an ingredient. Dry goods use the King Arthur Baking ingredient weight chart - 1 cup of all-purpose flour is 120 g, granulated sugar 198 g, packed brown sugar 213 g, table salt 18 g per tablespoon. Liquids use USDA FoodData Central portions: whole milk 244 g a cup, heavy cream 238 g, plain yogurt 245 g, water 1 g per ml. So 2 cups of sugar is 396 g and 240 g of flour is 2 cups. Without an ingredient, a volume-to-weight request is refused rather than guessed. The swap button reverses the direction.

Limitations

  • Ingredient weights are averages; brands, humidity and how the cup is filled change them by 10% or more.
  • Only the ingredients in the list can be converted between volume and weight.
  • Australian 20 ml tablespoons and the US labelling cup of 240 ml are not offered as units.

Questions

How many grams is a cup of flour?

King Arthur Baking's chart gives 120 g for a US cup of all-purpose or bread flour, measured by spooning flour into the cup and levelling it. Scooping straight from the bag packs it and can give 140 g or more, which is why bakers prefer weights.

Is a cup the same everywhere?

No. A US customary cup is 236.6 ml, the metric cup used in many Commonwealth recipes is 250 ml, and the old British imperial cup is 284 ml. Nutrition labels in the US use a rounded 240 ml cup. Check where your recipe comes from.

Why do I need to pick an ingredient?

Cups measure volume and grams measure weight. A cup of honey weighs about 336 g, a cup of flour 120 g and a cup of cocoa about 84 g, so converting between them needs the ingredient's density. Within volumes or within weights no ingredient is needed.

How big is a tablespoon?

A US tablespoon is 14.79 ml, a metric tablespoon 15 ml - close enough for most cooking. Australia uses a 20 ml tablespoon, which this widget does not list; use 4 metric teaspoons instead.

Is butter by the cup accurate?

Yes - butter is dense and consistent, so 1 cup (2 US sticks) is 227 g in the King Arthur chart. Melted butter measures the same weight but slightly less volume.
